Royal Wedding Scones

Like most of the world, I set my alarm bright and early to catch the Royal Wedding this morning. I admit it took me until last week to get into it, but I’m so glad I did. I thought Kate was absolutely the epitome of elegance, grace, and class. Her dress was spectacular and she just looked stunning.

In keeping with British tradition, I served scones as I watched the wedding unfold. Working with what I had on hand, I used this recipe, subbing soy milk for the buttermilk, and omitting the chocolate chips because I was out. I also skipped the glaze because I just didn’t think I could handle that much sugar at 4:00 in the morning. They were delicious; subtly chocolate-y, not overly sweet, and the perfect companion to a morning wedding.

  2. These look scrumptious! I haven’t watched yet, but I saw her gown and it was so beautiful. I feel like I need to start speaking with a British accent, it sounds so elegant!
