From the Kitchen: Bachelorette Cupcakes

My sister’s best friend is getting married in August, and this past weekend was her bachelorette party. I was invited but couldn’t make it, so I wanted to send something up with Lauren for the girls to enjoy. What better thing than cupcakes??

I whipped up a batch of mini devils food cupcakes (regular sized ones are just too much sometimes, ya know?) and iced half with cream cheese frosting and half with chocolate swiss buttercream. Side note: there are approximately 4 different kinds of frosting in my freezer at any given moment :)

I should note that Martha Stewart’s chocolate swiss buttercream is the be-all end-all of delicious cupcakes toppers. I piped the frosting onto the cupcakes using a Wilton 1M tip to make delicious little pillows. I knew the cupcakes needed decorations, so I meticulously picked out the pink hearts from a container of red and pink ones (!). I also dyed white non-pareils neon pink to give them some variety.

I left some serious directions for transporting the treats, crossed my fingers and hoped for the best!

Later I received a text from my sister:

Haha!

They survived and were enjoyed by all. Phew!

Eating Pittsburgh

Ahhh, where are my Sunday Dinners going??

Truth be told, this happens sometimes – we all get busy and can’t get our schedules to link up in time for dinner. This past weekend I had a great excuse – my friend Caitlin got hitched in Pittsburgh! Full recap is coming later, but sticking with Monday food themes, here are some foodie highlights from my trip to the Steel City:

Friday night Steve and I met up with our college buddy Julian for tapas and drinks at Wine Loft. I didn’t snap any pics, but we rolled with crab stuffed mushrooms and stuffed peppers. Super tasty and fun to just catch up with Jules :)

Saturday we were told to visit DeLuca’s, which has been featured on Man vs. Food. I forget what Adam ate, but my boyfriend and our friend Ryan decided they would do their own challenge and rolled with the 6 Egg Omelette with Pepperoni, Bacon, Ham, Peppers, and Onions.

I am embarrassed proud to admit that they both crushed the dish, although Ryan had a bit more trouble than Steve (ha!). Steve actually managed to finish his side of toast and the last few bites of my breakfast as well.

I went with the Veggie Burrito and when it arrived the size of my plate, Steve automatically called dibs on my leftovers because he knew I would never finish it.

I am notorious for ordering a meal and eating three bites of it before getting full, but I am happy to report I finished almost the whole thing! I just kept plugging away, and before I knew it, it was nearly done. I could have finished it, but then I would have wanted to cry, so I stopped. I don’t want to get in the habit of consuming entirely too much food just because it’s sitting in front of me.

Demolished.

Our next stop on our food-venture was to a donut shop. I spotted signs for Peace, Love and Little Donuts and knew I had to try it out.

They were piping hot fresh from the oil and we enjoyed every last bite. I love donuts :)

We made a pitt stop at The Beerhive for a few craft beers – it was a fun little bar with a ton of options, and we just hung out for a while inside to get away from the unbearable heat!

I went with the Vanilla Java Porter and it was so delicious! I was stuffed from breakfast and donuts, though, so I struggled getting it down…

We headed back to the hotel after our beers – we all needed time to digest and relax before the evening’s festivities. Gorgeous wedding recap will be up tomorrow…

    Wedding Weekend!

    Today I’m heading to Pittsburgh for the wedding of my childhood BFF and her college sweetheart!

    I have known Caitlin since I was in first grade. Some of my earliest memories of my childhood involve running back and forth between each other’s houses on long summer days, watching Laguna Beach on her living room couch instead of studying for finals, concerts, movies, sleepovers in her basement, senior week, birthday dinners, field hockey, the amazing beaded curtain in her bedroom door that I always coveted, walking together at graduation, and even sharing a prom date!

    Caitlin has always been an amazing friend, even as we parted ways after high school and barely saw each other through college (she was at Pitt, I was at Villanova). We kept up with each other’s lives through facebook and the occasional catch-up phone calls, and even after all that time apart, it was as if nothing changed.

    I will always consider Caitlin to be one of my best friends and someone I will know forever. I am so beyond happy to celebrate her wedding this weekend and share in the making of some more wonderful memories. She will make an absolutely gorgeous bride and amazing wife!!
